At Covert Artisan Ales & Cellars in Sioux Falls, a veteran-owned and -operated company, we focus on the wilder and spontaneous side of fermentation. We brew in small batches; two to three barrels at a time. We consider the barrel to be an additional ingredient. We allow our beers time to develop the character we are wanting in the final product. This could take as little as three months, or as much as a few years. It’s a different model than
most other breweries, but we think it’s OK to be different. Our hours are Wednesday and Thursday, 4-10 p.m., Friday, 4 p.m.-12 a.m., Saturday, 12 p.m.-12 a.m., and Sunday, 12-8 p.m.
